Gluten Free Mango Chia Seed Pudding

Since changing our eating habits, I have been really good with keeping healthy food in our house. Especially no sweets. But sometimes, you just want a sweet treat!

I thought simple enough. And it looked tasty. Put everything in the blender but chia seeds, blend. Then add chia seeds to pudding in bowl and chill. I did make it kind of my own.

After making it, I would use two mangos instead of one. And more honey in the blending process. We just added a drizzle on our servings.

Gluten & Dairy Free Mango Chia Seed Pudding

1 can of coconut milk
1/2 cup of almond milk
1/2 tsp cinnamon
1 tsp vanilla
3 tablespoons honey
4 tablespoons chia seeds
2 mangos

Cut mangos and make sure to separate from the skin and seed. Add coconut and almond milk to the blender. Add mango, cinnamon, vanilla, and honey.
Blend well. Poor into a bowl and add chia seeds. Stir until mixed. And chill for about 4 hours.

I served mine with some toasted coconut flakes. It’s so smooth and creamy. The chia seeds does give it a different texture. But I’m the type of person that likes bobas and tapioca pearls. I only had one mango and it had just a hint. So next time two mangos for sure.

    Chia Seed pudding is my FAVORITE for breakfast. I always do mine with pineapple. When I am craving something super sweet I make it with strawberries and I shred a little dark chocolate on it.
